Photo Essay: Goat Milking Sequence

Mongolia is famous for its koumiss or airag, fermented mare’s milk. But not many foreigners know the word airag is generic for fermented milk from any livestock.
Goat airag is not like the pleasant drink that mare’s airag is. But it is something more familiar to me, as goat milking is the primary dairy production source in most southern and western regions of Mongolia.
Illustrated here is this daily summertime chore of goat milking, as witnessed in my province. But even within a single province there are differences I’ve observed.
